Best places and ways to travel within Australia and New Zealand?

Hello,
A friend and I are planning to travel to Australia, New Zealand and one other country for three weeks. The other country would be Bali, Thailand, Fiji or Tahiti. We will be there from mid-December to mid-January. We are there as a graduation gift to ourselves and would be there on a budget. We are wanting to do some surfing, scuba diving, snorkling, hiking and of course sightseeing. We would like to know what are the best places to do these things. We would like to stay away from tourist traps. We are also wanting to know what airports and cities would be best to fly in and out of. Any information or advice would be greatly appreciated.

I want to go on a really adventurous and fun vacation that I will never forget, but where? I’ve been to Spain and Italy, but I was thinking about South Africa or Australia this year.

How much money do I need to travel around Australia for one month?
Considering I might be living in a relative’s place for maybe 3 days and the rest wandering around, living in budget hotels (with minimal belongings but not backpacking either)

Do suggest some great locations and cities to visit for experiencing their culture, language and scenery (Ayers Rock, Great Barrier Reef). I don’t really care for those overrated commercialised touristy places (eg Gold Coast, Sea world etc)

Also, what is good advice for travelling within Australia by domestic flights to get cheapest fare and shortest distance?

A book/website recommendation on how to plan an Australian tour will be appreciated.
